Galentine’s Day Brunch (With Unicorn Hot Chocolate!)

Happy Galentine’s Day, friends! I have always loved Valentine’s Day, mostly for all the pretty pink surcees just when we’re all really over winter, but also for the excuse to throw a fun girly party and spend quality time with friends! So this year, I threw an official Galentine’s Day brunch so we could kick it breakfast-style. Ladies celebrating ladies.

Spending time with girlfriends without husbands and boyfriends is actually something I’ve been trying to focus more on lately. We love hanging out with other couples, which is what the vast majority of our social outings consist of. But when Will got really busy at work recently, I set up a bunch of brunch and dinner dates with lady friends, and it was awesome! I think I had kind of forgotten the joy of girl time and then rediscovered how important it is to mix some time in without the guys.  (Still love you, couple friends!)

Obviously this year a Galentine’s Day brunch was at the forefront of my mind, and it was so easy! I invited a little group of Grace DC ladies, and figured out most of the rest at the last minute!

I went with a pink and gold theme, using this garland I already had. The gold and white part were from the Christmas decorations at Hobby Lobby, and I mixed in the pink from the Target party aisle. The heart balloons are from Party City!

Brunch is always a pretty easy meal, but it’s even easier when you cheat and just pick up a pile of donut pretties.

Will also made this delicious Red Flannel Hash (Just because it’s a girls’ party doesn’t mean I don’t still need my chef!) and then went over to the Porters’ to brew beer with Jeff.

Ok, but really, the star of the show: I had to take this opportunity to make unicorn hot chocolate! I’ve been seeing it all over my instagram lately, and I just love how silly and happy it is. Bonus, it was also delicious! If you google recipes, you get all these silly fancy concoctions made with 13 kinds of syrup, but I just used this white hot chocolate mix!

The Easiest Unicorn Hot Chocolate

Heat enough almond milk for the number of white hot chocolates you want to make.

Add a drop or two of red food coloring to the hot milk to make it a pretty pink!

Mix up your mugs of white hot chocolate using instant white hot chocolate mix (which is now pink!).

Top with whipped cream, colorful mini marshmallows, and all the sprinkles.

I just added a few pink details throughout the rest of the room, and that was it!
